
Kaiseki cuisine
This dinner plan allows guests to enjoy a traditional Japanese Kaiseki course meal from Shunsai Shifuku, a Kaiseki restaurant in Inami, delivered directly to their room.
The multi-course dinner prepared by Chef Tetsuya Mori, owner of Shunsai Shifuku, features a rich selection of local vegetables, seafood, and other seasonal ingredients. Dishes are flavored with the pleasant tastes of kelp and bonito, bringing out the natural tones of ingredients and allowing diners to experience the changing seasons with their palates.

Dinner at L’ensoleiller
French restaurant L’ensoleiller is located by the lakeside of Sakuraga-ike, a symbol of the majestic nature of Nanto.
The star features of owner-chef Atsushi Takami’s French cuisine are the fresh seasonal vegetables produced by the community’s own local farmers. Chef Takami highlights organic and naturally-farmed vegetables grown in the red soil of Tatenogahara, where L’ensoleiller is located, as the main components for every meal, carefully and expertly combining them with fresh ingredients such as seafood from Himi, Shinminato, and Noto, as well as pork and beef from Toyama, to produce high quality dishes to be served before guests.
Chef Takami’s cuisine was awarded one Michelin star and the Green Star in the Michelin Guide Hokuriku 2021 Special Edition. Enjoy the authentic French cuisine of L’ensoleiller.

Dinner at nomi
For guests who have reserved the dinner-inclusive plan, we will provide a course meal at the smoked cuisine and creative Italian restaurant "nomi." The meal will feature appetizers, a selection of smoked dishes, meat and fish dishes, and more, all prepared with seasonal ingredients sourced locally.
